Pascha Recipes – Gyro Lamb Meat

Ingredients

  • 1 medium onion, shredded
  • 2 lbs ground lamb
  • 1 tablespoon finely minced garlic
  • 1 tablespoon dried marjoram
  • 1 tablespoon dried ground rosemary
  • 2 teaspoons kosher salt
  • 1/2 teaspoon fresh ground black pepper

Directions

  1. Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel.
  2. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  3. Return the onion to the food processor and add the lamb (and beef if using), garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.

TO COOK IN OVEN as a meatloaf, proceed as follows:

  1. Preheat the oven to 325 degrees F.
  2. Place the mixture into a loaf pan, making sure to press into the sides of the pan.
  3. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F.
  4. Remove from the oven and drain off any fat.
  5. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F.
  6. Slice and serve on pita bread with sauce, chopped onion, tomatoes and feta cheese.

TO COOK ON ROTISSERIE proceed as follows:

  1. Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long.
  2. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets.
  3. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
  4. Preheat the grill to high.
  5. Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings.
  6. Cook on high for 15 minutes.
  7. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F.
  8. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees.
  9. Slice and serve on pita bread with sauce, chopped onion, tomatoes, and feta cheese.
  10. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.

Cucumber Gyro Sauce from All Recipes

INGREDIENTS:

  • 1 cup sour cream
  • 2/3 cup peeled and grated cucumber
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon chopped fresh dill
  • 1/4 teaspoon prepared mustard
  • 1/4 teaspoon garlic powder
DIRECTIONS:
  1. Combine the sour cream, cucumber, garlic, dill, mustard, and garlic powder in a bowl; stir to combine. Chill in refrigerator at least one hour before serving.

Pascha Recipe – Gyro Pita Bread

Ingredients:

  •  2½ tsp active Dry Yeast
  •  Salt (to taste)
  •  1 tbsp Sugar
  •  4 cups All-Purpose Flour
  •  1½ cups warm Water
  •  1 tbsp Olive Oil
  •  2 tbsp Cooking Oil (for frying)

How to make Gyro Pita Bread:

  1. Mix yeast and sugar with ½ warm water
  2. Leave aside for 10 minutes to ferment.
  3. Combine flour with salt and dissolved yeast.
  4. Add the remaining warm water and knead very smooth dough.
  5. Pour olive oil over the dough and knead again to absorb the oil completely.
  6. Cover and keep at a warm place for 2 hours to rise to double in size.
  7. Knead again.
  8. Preheat oven to 350 degrees F.
  9. Divide the dough into medium-sized balls and roll them to 1/4 inch thickness.
  10. Place them on a lightly oiled cookie sheet and bake them in the lower rack for 2-3 minutes on each side.
  11. Remove them and wrap into a fresh towel and cool to normal temperature.
  12. Heat oil in a skillet and fry the balls until golden brown.
